Brewing Instructions
To prepare usucha (thin matcha):

1. Sift 2g of Tsuru no Mukashi into a tea bowl.

2. Add 4-5 teaspoons of water (10 ml) and whisk with a chasen (bamboo whisk) until smooth to reduce bitterness and create a creamy texture.

3. Add 50 ml of hot water (around 80°C) and whisk for 30-50 seconds.

4. Serve with sweets.

Why 80°C Water Is Best
Water at 80°C prevents over-extraction of bitter catechins, ensuring a harmonious balance of flavor and aroma. The right temperature enhances the matcha’s natural sweetness and umami.
